This family-owned winery in Nova Scotia’s Annapolis Valley is dedicated to certified organic and biodynamic agriculture alongside Old World winemaking techniques.
Tasting Notes
Pale gold in color with an expressive, perfumed nose of honeyed citrus, fragrant peach blossom and green apple. Light-bodied, off-dry, lively and fresh from start to finish, with a bright acidic backbone providing balance and structure. Will continue to evolve in bottle, only gaining in complexity and depth over time. A versatile food-pairing wine that matches well with moderately spiced aromatic dishes, roasted poultry or pork, salty cheeses and a wide variety of seafood from lobster to smoked salmon or fresh snow crab.
Method
The Lightfoot & Wolfville Terroir Series is a collection of small-lot, single vineyard, single varietal wines designed to showcase our unique sense of place in the Annapolis Valley. Label imagery reflects this theme and helps to tell the story of where this wine comes from. The bees, butterflies and cow horns represent our biodynamic farming philosophies and the concept of working in harmony with nature. The eye represents the human element within the whole-farm system and the role we play in terroir expression.
This Riesling is 100% estate-grown with all grapes hand-harvested from the Lightfoot Home Farm Vineyard in Wolfville, Nova Scotia, grown on the shores of the Minas Basin. Two different picking dates provided aromatic intensity and flavor concentration while retaining freshness and acidity. Fermentation was spontaneous with indigenous yeast in stainless steel and very long and slow (45 days), providing layers of depth.
