French-Canadian Pascal Marchand moved to France in 1985 when he was 22 years old, beginning his winemaking journey at Clos des Epeneaux in Pommard and becoming part of a new generation of Burgundy producers who believed that good wine starts in the vineyard. After several stints all around the world and an impressive resume of consulting, Pascal became one of the best known “flying winemakers.”

Moray Tawse is a financier by trade, serving as the vice president and co-founder of First National. After realizing the potential of winemaking in Niagara, Ontario, Moray purchased his first six acres of vineyard in 2000. Five years later, he opened Tawse winery and has since acquired 200 acres of vineyards all over the Niagara region and has been named Canadian Winery of the year multiple times. 

Marchand-Tawse is a co-venture between Pascal and Moray; this duo of vignerons/micro-négociants are working with their partner-growers in the many appellations of Burgundy while embracing organic and biodynamic farming practices, crafting wines of purity and class.

Tasting Notes

A classically elegant Puligny-Montrachet.  Expect a refined, complex Chardonnay with vibrant minerality and citrus notes, lots of concentration and length.  Drink now or cellar.  Some food parings suggestions are seared scallops, steamed lobster with butter,  cream based pastas, cheese risotto or a slightly upscale roast chicken dinner.  

Method

The appellation of Puligny Montrachet lies in the Cotes du Beaune, in the southern part of Burgundy.  This appellation has a high water table (the reason why there are actually so few cellars located here – the water table is too high to dig them); which may be a beneficial aspect presently considering climate change, global warming and more frequent droughts.  The vines are mainly planted on brown limestone soils alternating with clay limestone marl and the exposition is south east.  The grapes are hand harvested and whole bunch pressed in a pneumatic press.  Alcoholic and malolactic fermentation happens in barrels without any sulphur addition.  The wine ages “sur lies” without “batonnage” and is raced once during the 16 months total ageing.  The wine ages in mainly used oak, 20% new oak.  Fining followed by light filtration before bottling.
