Nessun Dorma Lambrusco di Modena Grasparossa (750ml)

Made from Lambrusco Grasparossa from a 6.5 hectare parcel on the the Montanari family’s 20 hectare estate.  The yields are low, just 6.5 tons/hectare, which is well below the appellation’s maximum of 18 tons.  The grapes are de-stemmed and undergo a soft press and maceration for 5 days at a controlled temperature of 5°C.  Fermentation in stainless steel with ambient yeasts for 7-10 days.   The base wine is then clarified, lightly filtered, and racked for secondary fermentation into a pressurized, temperature-controlled stainless-steel tank for 20-30 days (Charmat method).  The wine ages on the fine lees for 6 months, which is much longer than the 3 weeks more typical to Lambrusco.  The wine is then very lightly filtered and bottled.
