Sitting on the banks of the Speed River in Guelph, Ontario, Spring Mill Distillery is rooted in history and shaped by tradition. Established over a decade ago, the distillery was founded with a focus on producing high-quality Canadian spirits. From the outset, an emphasis was placed on sourcing premium Canadian grains and utilizing equipment from established makers around the world. Production follows time-honoured techniques, with each batch carefully managed through every stage from grain to glass.
Quinn Sleeman brings additional focus and craftsmanship to the spirits as Spring Mill’s apprentice Cooper. His work is defined by careful attention to detail and a commitment to artisanal methods, ensuring each vessel performs at its best.
Trained in Scotland and the U.S., he brings a deep understanding of wood theory and centuries-old coopering practices to the distillery. His approach is grounded in careful attention to detail and a commitment to artisanal methods. Experienced with all barrel types—from wine to whisky—he oversees on-site inspections and repairs and handcrafts a small number of Canadian oak barrels each year for aging select John Sleeman & Sons whiskies.
