In 1972, while shooting photographs for Nathan Chroman’s “Treasury of American Wines”, Jack and Dolores Cakebread casually offer to buy the Sturdivant Ranch in Rutherford. The Sturdivant’s took them up on their offer and so began the Cakebread wine story. The winery is a leader in innovative farming techniques and new methods of reaching out to consumers. Dedication to making the highest quality wines and a commitment to family has followed a continuum as their first small vineyard has grown into a thriving internationally distributed wine company.
Tasting Notes
Enticingly fresh, fruit-forward aromas of black currant, blackberry and boysenberry, joined by seductive chocolate and roast coffee scents. Beautifully structured on the palate, it boasts intense, concentrated, dark berry and cassis flavors balanced by supple, well-knit tannins and a long, flavourful finish with fine acidity and savory mocha tones. Delightful to drink now and for another 5 to 7 years.
Method
Grapes are harvested during the cool night hours to ensure the fruit retained freshness, purity, and natural acidity. Clusters were hand-sorted and destemmed, then whole berries were also hand-sorted. Partial crush for optimum extraction of color, flavor, and tannin from  grape skins. Prior to fermentation, grapes underwent a“cold soak,” which softens the grapeskins and further helps extract color and tannin. Following fermentation the wine was transferred to barrels for malolactic fermentation. The wine aged in French oak barrels (56% new) for 17  months, then blended to create that classic Napa Valley tapestry of flavors.
