White Rum

White rums with a high percentage of column still spirit will generally be light in intensity. They will retain some character of the base material, including grassiness, sugar cane and cinnamon. Molasses-based rums with a high percentage of pot still spirit can have a pronounced aromatic quality dominated by fruity smelling esters. White rums are a popular cocktail ingredient.
