Domaine de la Meulière is a family estate dating back to 9 generations to 1779. Today it is operated by brothers Nicolas and Vincent Laroche. It is located in the village of Fleys, on the right bank of the Serein river, 4 km from Chablis. The property extends over 25 hectares. The geology is characterized by Kimmeridgian clay-limestone soil. The alchemy of this terroir with the Chardonnay grape gives the wines minerality, power, floral and fruity aromas. They have 34 vineyard plots spread over the communes of Béru, Chablis, Chichée, Fontenay and Fleys. The average age of the vines is 32 years.
The domain is certified in High Environmental Value level 3 and adheres to the national confederation of Independent Winegrowers which ensured that each stage of production is carried out by the estate itself, from the cultivation, harvesting, vinification, bottling and marketing of the wine. They practice a reasoned, sustainable approach to viticulture through soil biodiversity, preserving existing resources, seeking alternative solutions all in the interest of reducing their environmental impact.
Tasting Notes
A fresh bouquet of white flowers, citrus and pear. The palate is elegant, straightforward and crisp, offering clean mineral flavours and all that freshness one expects in Chablis. This wine makes a delicious aperitif and pairs well with stuffed clams, sautéed shrimp, scallop carpaccio, ceviche, though you don’t have to stop at seafood; the acidity and concentration of Chablis makes it an excellent wine choice to enjoy alongside charcuterie, terrines and even ham.
Method
Domaine la Meulière’s Chablis originates from plots located on the right bank of the Serein. The grapes grow on the characteristic kimmeridgian marl, a mix of limestone and clay formed eons ago, essentially fossilized oyster bed. The grapes are hand harvested and sorted before fermentation in stainless steel tanks. This Chablis undergo malolactic fermentation in temperature controlled stainless steel tanks, which subdues the bracing malic acid acidity but by no means detracts from the wine’s overall energy and freshness.
