Sourwood Cider makes bone dry, sometimes tart, unfiltered ciders. Based in Halifax while currently working on relocating to their Farm in Petite Riviere – they source fresh-pressed juice from local apples grown in the Annapolis Valley. Sourwood works with wild and alternative yeasts, and focuses on creating unique flavour profiles. They are currently experimenting with ciders aged on fruit, and are starting to release wine/grape co-ferments.
Tasting Notes
This bottle is a blend of locally grown apples and grapes. The intense acidity of Frontenac Gris is balanced out by the bouncing balance of Ida Red Apples. Tart and juicy, Ida Red brings a nice roundness to this bottle, filling in the gaps where grapes cannot. Drinks like an orange wine.
Pet-Nat style, serve chilled!
Method
The Frontenac Gris is a pink berry from the Frontenac line of grapes developed in Minnesota. Cold hardy and so beautiful when freshly pressed. 2 week maceration on both apples and grapes – bringing in some grippy stem vibes, some tannins, and body.
