The Billecart-Salmon Champagne house is a medium sized producer in Mareuil-sur-Aÿ.  Mareuil-sur-Aÿ, which up until 2016 was a commune within the Vallée de la Marne, but now falls under the administrative commune Aÿ-Champagne.   The Champagne house was founded in 1818 with the marriage of Nicolas François Billecart and Elisabeth Salmon and is still family-owned.  The house is recognized for their finesse and freshness and has a devoted following.
The estate consists of 100 hectares and the grapes are sourced from an area totaling 300 hectares across 40 crus of the Champagne region. The majority of the grapes used for vinification come from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs.

Tasting Notes

Straw-gold color with a fin bubble and mousse. Uplifting aromas of orchard fruit; apple blossom and ripe pear. The palate is well focused and defined with a richness that indicates this is a Champagne that can be enjoyed now but will have a long life in the cellar should one wish to wait while it develops and open it at a later occasion.  

Method

The Brut Reserve is a non vintage Champagne blend of Chardonnay 40 %, Pinot Meunier 35 %, Pinot Noir 25 %. The dosage is about 8g/L.
