Tasting Notes
Perfumed aromas of fresh melon, yellow apple, lime and white peach, with complementary mineral and toasty-spicy oak scents. On the full-bodied, yet sleek palate, the wine offers concentrated, beautifully focused, peach, apple and citrus zest flavors, with mineral and spice tones enlivening the long, refreshing finish. Delightful now will drink beautifully for another 3 to 5 years.
Method
The grapes are harvested at night in small batches at perfect maturity. The fruit, cool from the evening temperatures, was pressed directly into tank using whole cluster pressing then the juice was transferred to into French oak barrels to ferment. In order to achieve maximum fruit expression, we aged the wine on primary yeast lees for eight months with intermittent stirring of the lees to enhance texture and boost complexity. 13% of the wine undergoes malolactic fermentation.
