Daftmill Winter Release 2012 Single Malt (700ml)

Scotland has no shortage of cult Distilleries, but Daftmill sits squarely in the top echelon. Produced in Fife, Daftmill has no visitor centre because it is primarily a fully operational farm, making whisky when time allows for it. 

A two-person operation, Brothers Francis and Ian are passionate farmers who focus on their barley fields and cattle, with the distillation happening between the months of June-July and November-February. Truly a farm to dram operation, Daftmill grows their own heritage barley, and uses high quality water from the artisan well located on the property. Their stills were manufactured in Speyside, but everything else in the distillery is from the Lowlands. 

They don’t release many offerings each year, normally a “Winter Release” and a “Summer Release” with a couple single casks mixed in. That’s it. Low production of extremely high quality whisky.
