Originally, the wine produced by the Lavantureux family was mainly drunk by family and friends. Marine and Gervais, Roland’s paternal grandparents, began to sell the wines from the domaine in “feuilettes” (132 liter barrels, typical of Chablis) in Auxerre and Paris. Roland was the first to bottle the wines in 1979 and it was then that he gave his name to the domaine. He expanded the domaine from 5 hectares to 20 hectares and continued to develop the business in France and abroad. The domaine is about 20 hectares of Chardonnay vines in Lignorelles, about four miles northwest of Chablis. Since 2010 his sons Arnaud and David work alongside him. Arnaud works in the vineyards and cellar, while David takes the lead in marketing and sales. The domaine is known for making no no nonsense reliable and delicious Chablis.
Tasting Notes
We can immediately feel freshness with great floral flavours Tasting reveal notes of citrus fruits before white flowers. Pleasant and precise, this wine shows a mineral intensity which offers a beautiful finish. This wine can be tasted with seafood, grilled fishes, white meat or with cheese from our mountain
Method
The region is best-known for the Kimmeridgian soils, a highly-prized terroir of limestone and clay infused with tiny, fossilized oysters. The intense chalk and sea-shell minerality lends deep complexity to whites, making this region an ideal home for the Chardonnay grape.Â
Alcoholic fermentation in tank, temperature control allows us to find very fine and precise flavours during fermentation. The aging is 10 to 14 months and is made 75% in an inox tank and 25% in oak barrels (2 to 7 years old) The barrel aging brings complexity and higher deepness to the wines. The blend with the part in the tank helps us to find every year the best balance for each cuvée.
