Lightfoot & Wolfville is owned and operated by the Lightfoot family who have been farming in the Annapolis Valley for eight generations. Lightfoot & Wolfville brings a light touch and enlightened approach to both the agricultural and artisanal aspects of viticulture and winemaking. They work in harmony with nature and letting the land offer up its innate best, without subjecting it to aggressive inputs. The winery is located on the home farm site, this land has been in Michael’s family for four generations.
Tasting Notes
In the glass, a pale salmon hue with fine, lively bubbles. On the nose, delicate wild strawberry and river mint leaf, layered with
doughy biscuit notes. Lively acidity lifts the mid-palate, with a creamy mousse that provides balance and elegance. Pairs well with trout tartare with crème fraîche and dill, strawberries and cream and salty cured meats
Method
The newest addition to Lightfoot & Wolfville’s traditional method sparkling program, the Brut Rosé has quickly cemented its place in the Lightfoot & Wolfville portfolio following the inaugural release in the spring of 2020, which went on to rank on the Wine Align

A coastal influenced, traditional method sparkling rosé, this Brut Rosé demonstrates the vibrancy, brilliance and clarity of flavour indicative of an ultra cool-climate region. From 70% Pinot Noir and 30% Pinot Meunier with 11-months aging on lees. The vast majority was pressed whole cluster with a minor amount spending a short time (~1 hour) in contact with skins. Individual vineyard parcels were fermented as separate cuvées in stainless steel with neutral Champagne yeasts prior to blending. A full malolactic fermentation in the base wine contributes to the rounded, creamy mid-palate.
