Pale gold in the glass with a fine, persistent mousse, the 2021 Brut opens with aromas of Honeycrisp apple, preserved citrus, and crushed stone, layered with delicate white blossom and subtle notes of toasted hazelnut. The palate is defined by stony precision and saline freshness, balanced by understated richness and texture from extended lees aging. A taut, elegant mousse carries flavours of orchard fruit, citrus oil, and wet stone through a long, refined finish marked by cool climate acidity and finesse.

Ideal pairings include seafood crudo with citrus and sea salt, potato rösti with crème fraîche and caviar, or salt-baked halibut with fennel and preserved lemon.  Recommended Drinking: 2026-2031
