In the early 1990s, the Guibert family (of Mas Gausac) wanted to create a collection of more accessible wines in the great terroirs on the amphitheater site of Villeveyrac in Hérault. They partnered with about 30 winegrowers of the Villeveyrac cellar and created a second line of wines called Moulin de Gassac.
For over 30 years, the authentic production approach has continued to drive the search for quality in this vineyard. Across 250 hectares, all the plots are subject to ambitious specifications : selection of vines according to terroir, low yields, plot-by-plot vinification in dedicated vats to name a few. The wines are produced under the guidance of two agricultural engineers who are involved in the viticulture and winemaking processes.
Tasting Notes
Light citrus, green apple and a hint of thyme. The palate is light bodied, with lemony acidity and a saline minerality typical of Picpoul. Keep it simple and fun and enjoy this crisp and refreshing white wine as an easy aperitif with a bowl of salt and vinegar chips or go the classic route and drink it with shellfish like oysters, steamed mussels and clams. Best served between 8°C and 10°C and enjoyed the wine while it is young; ideally 1-2 years after the vintage.
Method
Made from the Picpoul grape from the Pinet commune in the Hérault département of the Languedoc Roussillon. The grapes, which aresustainbly grown and certified sustainable from Terra Vitis, grow on clay and ancient limestone soils close to the Thau Lagoon. The grapes are destemmed and fermented at controlled temperatures in stainless steel tanks. The wine rests for about 4-5 months in tank before bottling and made for early consumption.
