The first vineyards were planted on the Parés Balta estate in 1790.  Currently it is the third generation of the Cusiné family, Joan and Josep, who are at the head of the winery, with the unconditional help of their parents and their wives, María Elena and Marta, two women that fell in love with the brothers while learning about the world of wine and becoming the winemakers of the winery for more than 20 years.

Parés Baltà, has been farming organically since 1790, and biodynamically since 2012. The vineyards, fields, forests and flock of sheep all have the international Demeter certification. They believe in this method and apply it because the most important thing is the quality of the product.    All the wines of Parés Balta are made with grapes that grow on their 5 estates, located between 170 and 700 m above sea level, and a few kilometres from the Mediterranean Sea, Barcelona and the beautiful village of Sitges. The wide variety of soils and microclimates enjoyed by all our estates, allow us to make a wide range of wines.

Tasting Notes

Subtle pink with salmon-coloured notes and fine bubbles in the glass.  Complex notes of candied fruit and nuts on the nose.  The palate is expressive, energetic, creamy with well-integrated mousse and ripe berry fruit flavours.  This is a serious and well structured Cava and wonderful alternative to more expensive bottles of tradional method sparkling rosés.  

Method

Rosa Cusiné is a mono-varietal sparkling wine made exclusively with the Grenache variety. This cava highlights the great potential of this variety that is so deeply rooted in the region’s viticultural heritage.  It is an homage to the memory of all the ancestors who worked the land and produced wine in the region and more importantly a Cava in recognition of a lifetime’s work, the wisdom, energy and vitality of family member Rosa Cusiné, who celebrated her 100th birthday in 2020.

Rosa Cusiné is made from Grenache planted at altitude and grown organically and biodynamically in our vineyards in the Penedès.  Harvested by hand and in small boxes to avoid oxidation of the must. After arrival at the winery the grapes are gently pressed. Fermentation in stainless steel vats at 16°C for 16 days. After fermentation, contact with the fine lees is maintained for 3 months with daily bâtonnage.  It is not aged in barrels and undergoes a second fermentation in the bottle according to the traditional method, with a minimum ageing period of 48 months.
