The stunning Isles of Scilly are a small archipelago off the coast of Cornwall, England. The inspiration for this gin came from a 1665 shipwreck by the famed Bishop’s Rock Lighthouse (note the shape of the bottle) where brave islanders rescued the crew from the perilous Atlantic ocean. Amongst the ships cargo was pepper from Java, a key ingredient in the gin.Inspired by the ocean beauty, Scilly Gin truly captures the Atlantic spirit.
The distillery itself is run by two people, and two people only. Husband and wife duo, Arthur and Hilary, are long time industry veterans and in 2018 Hilary had the idea to start a distillery on the Isles of Scilly. Having close ties with the Isles, Hilary’s family had lived there for over 60 years, as well as with Halifax (where she attended school for Hospitality).
Arthur handles the business side, while Hilary handles production.
Tasting Notes
From the distillery: “On the nose , a lovely balance of piney juniper, piquancy of cardamom, with a hint of orange, herbal lime leaf and warm familiar notes of cassia. Full and rounded in the mouth, with soft citrus and juniper on the fore, followed by layers of fennel, a fruity peppery note and subtle spice. The savoury tones of the pepper and cardamom are balanced by a touch of sweetness from the orange and fennel. Balanced with spice notes from pepper and cardamom with warm sweet notes from the cassia. Kaffir lime delivers the subtle citrus notes on the finish, encouraging another sip!”
Method
Ethically sourced botanicals are steeped for 48 hours and then left to marry for at least five weeks, creating a soft, lush and round mouthfeel. Ideally served over ice with tonic water and a slice of dried orange.
