Located on a 37-acre farm in Caledon, ON. Sonnen Hill brewery uses the finest ingredients available for their hoppy beers and lagers as they aim to make classic beer influenced by modern brewing techniques. All of their saisons, fruit beers, and spontaneous beers use almost exclusively Ontario-grown ingredients and focus on natural fermentation using cultures from the environment around them. Even planting over 200 fruit trees that will be used to make beer in the coming years, a vegetable garden, and 12 beehives. Sonnen Hill is committed to restoring the land they use by working with our a conservation authority to reintroduce native grasses, wildflowers, and add bird and bat boxes to create a nice habitat for the wildlife around them. Tasting Notes
Classic Riesling aromas of apple, pear, and pineapple. Light American oak, a prickly carbonation, some salinity and a juicy acidity allow for a quenching finish.
Method
This wine beer, or grape ale as they are more often called, was made by blending oak-aged saison with Riesling wine grapes from Hinterland Wine Company in Hillier, Ontario. The result is a product that blurs the lines between wine and beer and can truly fit any occasion – food pairing wizard!
