Moirae Choquette is a Canadian Indigenous entrepreneur and public speaker. In 2021 she saw that there was a gap in the market and opportunity to bring a wine she loved to the Canadian market. She partnered with Canadian sommelier Brad Royale to create Tomato Wheels Lambrusco. They sought out a fourth generation family owned and operated vineyard in Emilia-Romagna to bring their vision to fruition. Tomato Wheels is a successful collaboration between a passionate entrepreneur, a creative sommelier and a family of dedicated vignerons.
Tasting Notes
Deep purple and forthy in the glass. The palate has a pleasing frothy mouthfeel and is bursting with notes chilled blueberries, blackberry, mulberry, violet, lavender and crème fraîche. Expect a dry wine with juicy acidity and a little tannic bite.

Serve chilled and enjoy with prosciutto, pizza, Parmiggiano Reggiano, pasta Bolognese, burgers or be adventurous and make an affogato Lambrusco afffogato by pouring it over vanilla gelato.
Method
This naturally sparkling red wine is a blend of 85% Lambrusco Salamino and 15% Malbo Gentile. Salamino is the most widely planted of the Lambrusco varieties and has been traditionally been cultivated in an area in the province of Modena. The name references the shape of the grape bunch, which look like a small salami. It is said to craft the most balanced Lambrusco wine. Here is it blended with some Malbo Gentile is a little known indigenous red grape from Emilia Romagna that is often blended with Lambrusco varieties in small amounts to make Lambrusco wine; it contributes to colour, body and fruitiness and tannin.
