High on the slopes of Mount Veeder, Mayacamas Vineyards has been a source of legendary California wine since 1889. As the newest owners in a lineage of pioneering caretakers spanning 125 years. The Mayacamas style begins with an early harvest to preserve acidity and encourage bright, vibrant flavours. The wines see extended ageing in neutral oak vessels ranging in size from small barrels to large foudres—some in use since the 1920s. Finally, the wines are released only after further time in bottle, ensuring the elements coalesce into a complete wine. This unwavering approach results in classically-styled, age-worthy wines. Because of the remarkable ability of these wines to continue to improve with decades of aging, the estate holds back a percentage of production for re-release in the future.
Tasting Notes
On the nose, bright raspberry and resinous pencil shavings. On the palate, those aromas come through with added brambly fruit and pomegranate aromas; fine, earthy tannins and flinty minerality round out the palate. Pair with beef, game, or your favourite slow-braised/roasted meats.
Method
Made from 100% Cabernet Sauvignon, the grapes are sourced from vineyards within the Mount Veeder Appellation. Grapes originate primarily from 20 to 30 year old hillside vineyards up to 2,000 feet in elevation. the wine sees extended ageing in neutral oak vessels ranging in size from small barrels to large foudres—some in use since the 1920s. 32 months in neutral oak–20 months in large format foudres, and 12 months in barrique. After bottling, the wine was cellared for an additional year before release.
