This is my only experience with shochu. Crisp, clean, with a mild cereal sweetness, along with a woodsy or grassy flavor. I’ve experimented with this in place of vodka, and I have yet to find something that this didn’t improve or at least match. Haven’t tried it in a martini, but that sounds delicious.
