Gimonnet Rose de Blancs (750ml)

This is a new iteration of Champagne for Gimonnet, a house known for their Blanc de Blancs style.  They managed to make a rosé Champagne without changing their signature style of purity, freshness and elegance.  93% Chardonnay from the Côte des Blancs sub-regionmakes up most of the blend.  7% Pinot Noir from the Montagne de Reims (Bouzy) sub-region brings a light pink colour and berry fruit aromas and flavours.  The grapes come from a combination of Grand Cru and Premiers Cru vineyards within the regions.  They are hand harvested, pressed and the juice cold settles before temperature controlled alcoholic fermentation followed by malolactic fermenation in stainless steel tanks.  The Chardonnay rests on the lees in stainless tank for 6 to 8 months, cold stabilized and clay filtered.  The Chardonnay wine and Pinot Noir wine is blended and the assemblage is bottled and left to rest for 18 months for secondary fermenation and more lees ageing.  The wine is disgorged 3 months before shipping and is given a 5 g/L dosage.
