2 Crows Brewing Co. is the brainchild of husband and wife duo Mark and Kelly Huizink and brewer Jeremy Taylor. They brew modern beers with care and focus on quality. Their aim is to get people thinking about craftsmanship, where their beer is coming from and the various characteristics that make beer great.
Tasting Notes
Massive hop aromatics, super juicy and tropical, but also super grape-y and loaded with red fruit notes of blackcurrant and blackberry.
Method
Starting with a base of Pilsner malt, Golden Promise, unmalted and flaked wheat plus golden naked oats, brewers mash hopped and bittered with Columbus and added a healthy handful of Citra, Hallertau Blanc and Nelson hops to hopback. Fermented with a combination of a juicy English yeast strain and Escarpment Labs Thiol Libre, the beer was also dry hopped super aggressively with Nelson, Citra, Hallertau Blanc, and a bit of Enigma.
Separately, the brewers also produced a piquette — a fruity, zesty little wine spritzer-type drink — out of an assortment of aromatic freshly pressed red wine skins from Lightfoot & Wolfville. When the beer was justt about done fermentation, the piquette was added, along with a heavy dry hop, and capped the tank for a lovely natural carbonation.
