Hellwoods was the very first imperial stout Bellwoods ever brewed, and has morphed over the years from a traditionally bitter, roasty/toasty stout to one that’s full bodied and chewy. The original Hellwoods brew is full-bodied and chewy, and the added vanilla in this batch gives it a lighter, sweeter taste.

For over 10 years Toronto’s Bellwoods Brewery has established themselves as one of the country’s most iconic craft breweries. From lineups around the block in the early days at their Ossington Ave. location, to opening a second much larger brewery complete with rows upon rows of barrels for mixed fermentation and dark beer ageing. Bellwoods has won a long list of national and international awards and have collaborated with countless world-class breweries.

Method
Hellwoods Imperial Stout was the first Imperial Stout that the brewery ever brewed (over 10 years ago!). Last year, they did a version with Madagascan vanilla steeped in the conditioning tank that was just for the brewpub that was such a hit they canned it this year.
