Tasting Notes
This wine is deep ruby red in colour. The nose shows tremendous aromatic intensity, with berries and violets accompanied by notes of coffee and tobacco that lend complexity. Voluptuous and full bodied on the palate, with fresh fruit flavours and vibrant acidity. This is a wine can be enjoyed on its own or as an accompaniment to everyday dishes such as burgers, pasta or pork.
Method
100% Cabernet Sauvignon, the grapes were sourced from vineyards in the Rapel Valley. Cold soaked prior to the addition of selected yeast and fermented at 28 –30°C in stainless steel tanks using the ‘rack & return’ system and regular pump-overs. After fermentation the wine was given extended skin contact for 5-10 days before racking and pressing. The juice is fermented at low temperatures in stainless steel in ensure all fruity and fresh aromatics are preserved. The wine rests in stainless steel with 30% of the wine aging for 6 months in barrels of second and third use before it is blended and released.
