Opening their brewpub in 1998, Dieu du Ciel has gone on to world acclaim for not only their wide range of styles, but the quality and consistency of each beer they make. With a lively, and character filled pub in Montreal’s Plateau neighborhood, to their list of collaborations with breweries all over the world, DDC has something for everyone.
Tasting Notes
This hazy orange beer embodies the ideal of summer in every sip. On the palate, the freshness of kumquat floods your taste buds with notes of citrus and tropical fruits. The bite of the hops is balanced by the roundness of the malt and the tangy touch of the kumquat zest.
Method
Emphasising hop aroma and flavour without bracing bitterness, the New England IPA leans heavily on late and dry hopping techniques to deliver a bursting juicy, tropical hop experience. The skillful balance of technique and ingredient selection, often including the addition of wheat or oats, lends an alluring haze to this popular take on the American IPA.
Disco Soleil takes the New England IPA a step further and adds a logical pairing to the mix – fresh kumquats! Kumquats are about the size of a grape or olive and have soft, sweet skin, with slightly bitter flesh and tart juice.
