Easily one of the most loved and respected craft breweries in all of Canada. Opening their brewpub in 1998, Dieu du Ciel has gone on to world acclaim for not only their wide range of styles, but the quality and consistency of each beer they make. With a lively, and character filled pub in Montreal’s Plateau neighborhood, to their list of collaborations with breweries all over the world, DDC has something for everyone.
Tasting Notes
First brewed in 2011, the Solstice d’Ete Mangue sees the addition of a heaping pile of fresh mangoes. The result is an incredibly refreshing sour ale where the fruit is allowed to carry through without restraint.
Method
Unless intended, sourness in beer is considered a fault. However, in the case of Berliner Weiss, Gose, and Kettle soured beers – bacteria is added intentionally to produce different forms of acidity that contribute to pleasant tart flavours and mouthfeel. These beers can be blended with various fruits, but in the case of the Sour IPA – loads of hops are added for bitterness, flavour, and aroma at different stages. This creates a juicy and citrusy beer with a refreshing tart finish.
