Traditionally in Guyana, there were hundreds of sugar estates and most of them had their own on-site agricultural distillery. Over time, economic pressures forced most of these to cease independent operation and consolidate. Today, Demerara Distillers operates the last remaining distillery in Guyana at Plantation Diamond on the East bank of the Demerara River. They have also collected one of the most interesting arrays of stills having one of the last working examples of a wooden Coffey still in the world as well as two wooden pot stills which are also unique to the distillery. In this sense, Demerera Distillers is a unique opportunity to taste the history of the sugar trade and the development of distillation in their rums.
Tasting Notes
El Dorado 15 year is a clear reddish amber colour in the glass and wafts with sticky saltwater toffee, molasses, stewed prunes, candied orange peel. The palate is silky and stuffed with milk chocolate, espresso roast, burnt sugar and additional accents of tobacco and christmas cake on the long smoth finish. This is one best savoured on its own and will quickly find a permanent home in your liquor cabinet.
Method
El Dorado 15 year old is a combination of distillate from Enmore and Diamond Coffey stills, the Port Mourant double wooden pot still, and the Versailles single wooden pot still. These distillates are carefully blended and then aged in ex-bourbon barrels and the youngest rum in the blend is at least 15 years old. Once the rum is fully matured, it is bottled at 43% alcohol by volume.
