After a few incidents of fate and circumstance, Fairweather opened its doors in May 2017. The brewery is home in a revitalized warehouse in west Hamilton’s Ainslie Wood neighbourhood. In addition to a taproom and bottle shop, they have a 60 seat patio, and a 10,000 square foot production facility which doubles as an event space.
Whether the brewers area exploring bright hoppy IPAs, rich, silky stouts and porters, elegant, classic continental lagers, or fruited and oak-aged beers that explore the edges of what beer can be, Fairweather will never be satisfied. They will tirelessly strive to create the best beer you will find anywhere. Period.
Tasting Notes
Soft More is an New England IPA with apple purée, blood orange, vanilla, citrusy hops & lactose.
Dense, ripe, and tropical aromatics of mango, pineapple, blood orange, apple pie, and vanilla come jumping from the glass and lead into a full flavoured, creamy and decadent palate. The addition of lactose sugar leaves behind a more creamy and rich texture than a regular IPA, helping to enhance the ripe and rich fruity vanilla flavours. This is a tropical vacation in a can.
Method
The Milkshake IPA – love them or hate them they have carved out a niche in the craft beer world. These are often the most expressive, textually complex, and additive laden offerings from the hoppy beer world. Brewed with flaked oats, lactose sugar, usually vanilla bean, and often multiple fruit purees.
Lactose sugar is not fermentable by brewers yeast, it leaves behind creamy texture in beer after fermentation. Historically used in English stouts generations ago, this technique was adopted by craft brewers to use in hoppy beers and sour beers.
