The domaine dates back to the 1950s.  In the the 1980s Patrick Hudelot took over the family estate and took it to the next level.  Today it has 22 hectares of vines in one of the most important regions of the Hautes Cotes de Nuits.  In 2000 Patrick converted his practices to organic viticulture in order to protect consumers, vineyard and winery workers and the ecosystem from harmful chemicals.  As of 2008 Patrick Hudelot has partenered with other Burgundian domaines from various appellations, acting as a negociants, and vinifying grapes in his own domaine, thus being able to expand his portfolio, now offering wines from various appellations, including Premiers Crus and Grands Crus.       

Tasting Notes

Damp earth, iron and gamey notes on the nose with underlying muddled cherries and raspberry fruit.  The palate is medium bodied with mouthwatering acidity, cranberry and sour cherry fruit, lightly sanguine with soft tannins.  This naturally made Pinot Noir will pairs well with pungent soft cheeses, earthy mushroom dishes and rare beef preparations.      

Method

Made from certifed organic Pinot Noir grapes grown mainly on the slopes of Villars-Fontaine on clay-limestone soil.  The vines are on average 25 to 35 years old.  The grapes are destemmed and the cuvée “Les Roncières” is naturally fermented for 3 weeks with daily pump downs and pump overs.  The wine then ages in oak barrels for 10 months before bottling.
