François-Xavier Nicholas is an artisan negociant in the Rhône area of France and he primarily works with growers in the Rhône, Provence and Languedoc regions. He recognizes that quality ingredients are the foundation of good wines hence his close relationships with growers and is hands on approach in the cellar.  He works closely with with vignerons and winemakers to ensure that wines under his label are crafted with the best fruit and in the style that best expressed their primary ingredients and the land. 

Tasting Notes

On the nose, fresh notes of orange blossom, subtle citrus, and tropical fruit. On the palate, those flavours carry through with added saline minerality. Use as an aperitif, pair with seafood dishes, or serve alongside Asian cuisine. 

Method

Made from 40% Grenache Blanc, 20% Viognier, 20% Clairette, 15% Vermentino, and 5% Bourboulenc, the grapes come from vines with an average age of 15 years and a yield of 60hl/ha. Traditional winemaking is used; total destemming and direct pressing. Fermentation lasts 6 days with temperature control (24 degrees C) and the wine ages of 3 months in vats on the lees.
