In the early 1990s, the Guibert family (of Mas Gausac) wanted to create a collection of more accessible wines in the great terroirs on the amphitheater site of Villeveyrac in Hérault.  They partnered with about 30 winegrowers of the Villeveyrac cellar and created a second line of wines called Moulin de Gassac. 

For over 30 years, the authentic production approach has continued to drive the search for quality in this vineyard. Across 250 hectares, all the plots are subject to ambitious specifications : selection of vines according to terroir, low yields, plot-by-plot vinification in dedicated vats to name a few.  The wines are produced under the guidance of two agricultural engineers who are involved in the viticulture and winemaking processes.

  

Tasting Notes

The nose is elegant with notes of ripe and slightly jammy fruit, violet, garrigue, coffee and spices.  The palate is round and concentrated with lots of fruit, light toasty notes and soft velvety tannins and a pleasing finish.  This plush red would pair well with slow cooked meats, burgers, grilled vegetables and a range Mediterranean inspired flavours and dishes.  

Method

The Moulin de Gassac Selection comes from the finest plots of a unique terroir in Languedoc; an  amphitheater of vines facing the Mediterranean Sea and the port of Sète, the hillsides of Villeveyrac are the source of flavorful Mediterranean red wines.  The clay-limestone soil, rich in bauxite (rich in iron), is dry and well-drained.  This terroir allows the grapes to ripen, ensures a beautiful concentration of aromas , and naturally limits vine yields.

Elise rouge is made from Syrah grapes grown on limestone hillsides and limestone sandstone and marl hillsides for the Merlot.  It is an equal blend of the two grapes.  The grapes are harvested and fully destemmed, slow macerated (15 to 20 days) and fermented at 28 to 33°C.  The wine aged for 8 to 9 months in previously used barrels (1 to 3 uses).  The wine is bottled unfiltered; this may result in slight sediment in the bottle.
