Nicolas Mariotti Bindi settled studied law in Paris but the pull to return home to his native land and vineyards was too strong to ignore. He wanted a life as a vigneron, not a lawyer. He first got experience working in wine regions in France and Italy before settling in Oletta, Corsica to grow his own grapes and make his own wine. He started off with just 5 hectares of vines and celebrated his first vintage in 2007. He farms organically and is minimally invasive in his winemaking approach. Vinification is all natural and only limited amounts of SO2 are used with amounts stated on the label. Today Nicolas’ estate is about 15ha of certified organic vines all located within the Patrimonio AOC.
Tasting Notes
Stone fruit and white flowers on the nose. The palate is fresh, with white peach and melon notes and a pleasing salinity.
Method
100% Vermentino grown on clay limestone soil with southern exposure. Whole cluster pressed, wild yeast fermented, light pump overs in stainless steel tanks. The wine is lightly filtered before bottling.
