The winery San Silvestro is located in the village of Novello, in the heart of Barolo district. Here, Paolo and Guido Sartirano run the business with wisdom and respect for the tradition and for the history of this company. They are fourth generation of vignerons investing in the the future while respecting the values they’ve learned from their ancestors: consistency, authenticity and innovation.
They work closely with grapegrowers from different wine-areas, San Silvestro offers a range of wines that go from Gavi to Barbaresco through Asti and Barolo districts.
Tasting Notes
Spices and dried flowers on the nose; smooth and mouthfilling, with obvious but fine tannins providing that classic Barolo structure. Enjoy this with game, braised veal, stewed or grilled meat, mature cheese. The wine will soften and develop even more complexity with time; though if you are impatient and want to drink it now, give it a decant or time to open up in your class.
Method
Made from 100% Nebbiolo, as all Barolo DOCG wines are. The grapes are sourced from vineyards in the 11 villages of the Barolo district. Manual selective harvest, crushing and destemming. Fermentation takes place in stainless steel at a controlled temperature. The wine macerates on the skins, with daily pumping of the must over the cap. The wine ages in large Slavonia oak casks for at least 18 months before another rest period in bottle prior to release, for a required aging of 38 months.
