Located on a 37-acre farm in Caledon, ON. Sonnen Hill brewery uses the finest ingredients available for their hoppy beers and lagers as they aim to make classic beer influenced by modern brewing techniques. All of their saisons, fruit beers, and spontaneous beers use almost exclusively Ontario-grown ingredients and focus on natural fermentation using cultures from the environment around them. Even planting over 200 fruit trees that will be used to make beer in the coming years, a vegetable garden, and 12 beehives. Sonnen Hill is committed to restoring the land they use by working with our a conservation authority to reintroduce native grasses, wildflowers, and add bird and bat boxes to create a nice habitat for the wildlife around them. Tasting Notes
Franconian beers are not easily found in our market, or North America in general. Some Bishop’s customers may remember the textured, nuanced, and effortlessly easy drinking lagers from Mahr’s Brau and Schanzenbräu; Ur Pils, U-Bier, and Rotbier to name a few.
Sonnen Hill is trying to capture the essence of these German beers with Frank; a malty and exceptionally well balanced lager. Biscuity and lightly caramelized aromas of toasted bread, alpine herbal notes, marmalade, and white pepper all blend together to create a beer that is as complex as it is simple.
Method
Frank is a lager beer inspired by the Franconian beers of Germany. It’s a malty lager with some light caramel, nutty and biscuit notes, which are balanced by a nice bitterness and a floral hop aroma. Frank was brewed using a heritage barley variety called Isaria, which was the first barley variety in Germany that was officially approved for beer production.
