Founded in 2007 by Raj Bhakta, WhistlePig distillery is best known for it’s “ultra-fine” rye, but has now broken into the bourbon world. As story has it, Raj was on a hike and came across a Whistlepig (Groundhog) and loved the whimsical name, which gave his dream a name. Being a fully operational farm in Vermont, Whistlepig is able to grow their own rye, corn and barley, while maintaining space for their farm animals, making this bourbon a true “farm to glass” whiskey experience.
Tasting Notes
Round, full mouthfeel that coats the palate with a creamy texture that lingers through to the finish. Notes of sweet, ripe corn provide a subtle sweetness that is balanced with vanilla undertones that add warmth. Charred American oak influence adds nuttiness and structure that allows this bourbon to be enjoyed on its own or in a variety of cocktails.
Method
Whistlepig Piggyback bourbon is a high corn mash bill, with a dash of rye. Aged for six years in charred #3 barrels. Charred #3 barrels bring more spice and earth notes to bourbon, with the wood sugars beginning to present themselves in a way that incorporates more toffee and caramel to the final spirit. After aging, Whistlepig is bottled at 100 proof.
