Rum
With a little bit from everywhere, our Rum selection doesn’t disappoint.
Rum has a place on many Nova Scotians tables and liquor shelves, it’s no wonder we’re constantly getting so many inquiries about the latest from the world of Rum. With a growing number of local options, our selection doesn’t stop there. Jamaica (Worthy Park specifically, as pictured here), Venezuela, Guyana, and more are all represented in our Spirits portfolio. Now’s the time to see what we have to offer, with many exclusive to Bishop’s Cellar.

Situated in a town called La Miel near the Andes in Venezuela, Distilerias Unidas produces a variety of distillates but is certainly best-known internationally for their phenomenal rum. Ron Diplomatico Exclusiva has become something of a standard-bearer for modern Venezuelan rum as it is one of the most awarded rums in the world and frequently tops both tasting panels and consumer reviews. Diplomatico is made entirely from molasses and sugar cane honey from local sugar processing plants and has a much higher concentration of sugar than most rum producers have available to them. The result is an exceptionally rich and sweet rum that never fails to turn heads.

Local Rum. It just makes sense.
Rum running has a storied history within the Maritimes and even though those days are behind us, Rum still holds a special place in the drink world here in Nova Scotia.
A Bira is an all night ritual celebrated by the Shona, in which members of an extended family call upon ancestral spirits for guidance and intercession. The summoned spirits possess spirit medium(s) within the family, and they provide the means with which the living communicate with God.
These events are festive, there is food and drink, as well as music and dancing. As people get spiritual when they drink, sometimes they dance, sing and feast, it seemed fitting to name their brand as they did.

Traditionally in Guyana, there were hundreds of sugar estates and most of them had their own on-site agricultural distillery. Over time, economic pressures forced most of these to cease independent operation and consolidate. Today, Demerara Distillers operates the last remaining distillery in Guyana at Plantation Diamond on the East bank of the Demerara River. They have also collected one of the most interesting arrays of stills having one of the last working examples of a wooden Coffey still in the world as well as two wooden pot stills which are also unique to the distillery. In this sense, Demerera Distillers is a unique opportunity to taste the history of the sugar trade and the development of distillation in their rums.
