Castello Monsanto Nemo Cab Sauv IGT Toscana

Purchased in 1961 by Aldo Bianchi, he started vinifying the grapes from his Il Poggio vineyard separately the next year. Overseen by his son Fabrizio and daughter Laura, the risky move to vinify grapes and plots on their own demonstrated just how much of a force Sangiovese could be and thus, the first Cru of Chianti Classico was born.

Monsanto is located in the central-western part of Chianti Classico and more specifically, Castello di Monsanto is part of the sub-zone of San Donato in Poggio. The vineyards look out across the Elsa Valley, where mistral winds blow in directly from the Tyrrhenian Sea to mitigate the winters and cool the summers. Located between 280 and 320 metres above sea level, the vineyards benefit from a microclimate that allows Sangiovese to ripen uniformly most years.

Evolution Pinot Noir

Founded by Susan Sokol and Bill Blosser, they planted their first vines in Dundee Hills, Williamette Valley back in 1971, long before any sort of wine industry was established in Oregon. Nestled on an 89 acre estate (Sokol Blosser tends to 128 acres total) with the famous volcanic red Jory soil, the winery became B Corp Certified in 2015 (High social and environmental performance, legal commitment, and transparency are just a few things that describe the certification) and continue to commit themselves to sustainable practices in both business and vineyard. Sokol Blosser also became the first US winery to receive LEED (Leadership in Energy and Environmental Design) certification, further cementing their commitments.

With their primary focus on the varietals that have become so synonymous with Oregon (Chardonnay, Pinot Noir, and Riesling), in 1998 the Evolution label debuted and has since grown tenfold. Starting with the Pinot Noir, the label has expanded to include Chardonnay, red and white blends, and even boxed wine.

Saint Jean du Barroux La Source

Le Barroux is a small Provencal town located in the heart of the Vaucluse. Its twelfth century castle overhangs the stone-built village houses and picturesque alleys. In between the two famous mountains, the Mont Ventoux and the Dentelles de Montmirail, le Barroux is renowned as being an excellent tourist site, providing a magnificent view point. Nature surrounds the village, forests and fruit trees, intermingled with vines which paint a varying landscape of changing colors. The estate vineyards extend over 15 ha of the hillside, at an elevation of between 300 to 400 meters. It consists of 11 hectares of vines and 4 hectares of fruit trees and forest, on alternating terraces and slopes.

Phillip Gimel is the winemaker of the Saint Jean du Barroux wines.  His wines express the terroir of the lower slopes of the famous Mont Ventoux near the road between Le Barroux and the Roman town of Vaison la Romaine. The talented Philippe keeps his yields very low in order to concentrate fruit flavour and de-stems every hand picked bunch.  The wines are certified organic.

Wild - Tiny Bubs Cider

For centuries in the Annapolis Valley, farmers have pressed apples and fermented the juice in cool cellars over many months as a means of preservation and to yield a diverse range of cider refreshments. Wild Wines & Spirits uses native and selected yeasts to ferment pure apple juice, pressed on-site from apples they hand pick themselves. The cider is fermented slowly over the cool winter months, aged in barrels and tanks, then blended and bottled the following year.
