Domaine de Grand Pré makes polished and elegant Nova Scotian wines. The Domaine is known for its crisp and clean flavour profile and they pride themselves in using only 100 per cent Nova Scotian grown grapes. They grow specialty grapes that were developed for the Nova Scotian climate and landscape and the resulting wines wine awards year after year.
Tasting Notes
The Vidal Icewine was hand picked at Warner Vineyards in Lakeville, Nova Scotia. It displays notes of apricots, lemon, blood orange and marmalade. It is balanced with crisp acidity and a long, lingering, sweet finish. Ideal with fruit based desserts, blue cheese or to savour at the end of a meal.
Method
Though Canada is famous for its icewine and Nova Scotia was once only known for this style, this sweet elixir is becoming a rarity due to global warming. Nova Scotians complain about the cold, but we often don’t get the deep freeze needed to produce this unique luxury product every vintage. In order to make icewine, the temperatures have to hit -8 °C and -10 °C in November or December and remain there long enough for the harvest.
Icewine is made from frozen grapes, hand harvested at night in the bitter cold. A cool, slow fermentation results in a very complex, full bodied dessert wine. The golden nectar is very concentrated, high in sugar, flavour and balanced acidity.
