Guided by revered Master Distiller, Billy Walker, their team is on a âMeikle Tòirâ (meaning âbig pursuitâ). The goal: To carefully craft and cask-perfect a peerless peated single malt at their Speyside home, The GlenAllachie Distillery. Being independent allows for complete freedom to make decisions for all the right reasons, and to firmly place the focus on quality over quantity. In 2018, they began producing peated spirit â a much rarer style for the Speyside region â for several weeks each year. They only produce around 100,000 litres of new-make annually to create their premium small-batch releases.
Tasting Notes
From the distillery: “Nose: Baking spices, burnt honey and espresso, with hazelnuts, smoked almonds and butterscotch. Taste: Sweet peat, rich chocolate and heather honey, with cinnamon, ginger and oak-smoked sugar.”
Method
âThe Originalâ is our classic single malt that truly champions our peated pursuit. Made with mainland peat from St. Fergus, the flavour contribution is sweeter than that anticipated of coastal peat. Every step of the whisky-making journey has been meticulously considered and masterfully optimised to steer the ensuing aromatic and flavour characteristics of the whisky. After years of patient slumber, the spirit within each cask must meet the rigorous standards of Billy Walker and his team in order to reach the bottle.
