Tasting Notes
Sweet pear, baking spice and fresh pastry dough aromas. The palate is medium bodied with a mouthfilling creamy mousse. A sparkling wine that strikes an appealing balance between fresh citrus and apple flavours and rich autolytic notes. It is layered and complex and will keep you coming back from another sip.
Method
Bishop’s Cellar is thrilled to have Blomidon Estates Winery’s small lot bottling from their Woodside Road vineyard. This traditional method sparkling wine is a blend of Chardonnay (68%), Pinot Noir (24%) and Pinot Meunier (5%), with small amounts of Pinot Gris and Pinot Blanc. Aged in bottles for 60 months, this wine was hand-riddled and disgorged in September 2021. 7 g/L dosage.
