The Casablanca Valley is characterized by the cool climate, even in the summer months, with a large number of cloudy days with cool breezes almost all day.
Tasting Notes
Light yellow in colour, with a nose that shows good aromatic intensity with fresh fruit such as grapefruit and apricot accompanied by light notes of sweet spice and toast. Fresh, vibrant, and pleasingly lush on the palate, making this an excellent exponent of both the variety and the Casablanca Valley. An ideal wine to accompany every day dishes such as chicken, fish or pasta.
Method
To retain the delicate natural aromas and flavours, select parcels of fruit were crushed and lightly pressed prior to clarification and cool fermentation. Fermentation was undertaken at cool temperatures to preserve the delicate fruit flavours. The wine is fermented in stainless steel tanks with 20% in second and third use barrels. 10% of the wine undergoes malolactic fermentation and rests in 2nd use barrels for 4 months.
