Domaine Le Cengle is made by Chateau de La Galiniere. The vineyards Côtes de Provence rosé Château de la Galinière cover 30 hectares at the foot of the plateau Cengle next to Aix-en-Provence, in the town of Châteauneuf le-Rouge. The soil is poor and shallow, consisting mainly of clay, limestone and bauxite. It is the latter which gives it characteristic red color. The vines are on average 15 years old and are located 300 meters above sea level. The Domaine has been certified in organic farming since 2014. This means that we only use products of natural origin, limited in number and quantity. The use of pesticides is prohibited.
Tasting Notes
Light salmon-pink in the glass. The nose is delicate and has dominant notes of passionfruit, some sour cherry, pink grapefruit and grapefruit pithe and wet stone. The palate is fresh and dry with notes of passionfruit, citrus (grapefruit and lime) and minerality. Enjoy this bright rosé as an aperitif or with your summertime fare; anchovies on toast, salads, ratatouille, Provencal tomatoes, white meats or soft mild cheeses.
Method
A blend of Grenache, old vine Cinsault, Syrah, Tibouren. The grapes are delicately pressed in a pneumatic press. Only the clearest first juices are used to make rosés. The juice settled and fermentation takes place in stainless steel tanks at low temperature (14°C) for several days. The temperature then gradually increases during fermentation to reach a peak of 20°C. Aging takes place on fine lees in stainless steel vats for 3 months.
