Domaine de Fontenelles is located at the foot of the Montagne d’Alaric, in the north of the Aude department, in the appellation of Corbieres. The terroir is predominantly clay-limestone and the vines grow on stony terraces and enjoy a Mediterranean climate with oceanic influences.
The estate has the High Environmental Value (HVE) certification which corresponds to the highest level of environmental certification for agricultural operations. This level of certification is based on results indicators with regard to biodiversity, phytosanitary strategy, fertilization and irrigation management.
Tasting Notes
A vibrant purple ruby color, with a complex, powerful nose, combining spice and floral notes. The palate had ripe red and dark fruit, spice, florality and light wooded notes. The fine grained tannins provide a supple texture that carries onto the elegant finish. The wines aromatic profile, overall freshness and medium tannins make it a versatile food wine; try it with grilled beef, even tartare, duck breast or game birds.
Method
Within the unique terroir and environment, the vines have a long growing cycle, due to the dry, hot and sunny climate. The beneficial influence of Cers, the name of the local wind, naturally keeps mildew and mold at bay by cleanses the vines and making it possible to reduce phytosanitary treatments. This wine is a blend of 55% Syrah, 25% Grenache Noir and 20% old Carignan and Mourvèdre vines. Vinified in vats, partly with whole berries (carbonic maceration). The wine then ages for 6 months in French oak barrels.
