Tasting Notes
South Shore is an approachable sour beer loaded with fruit flavour. A mixed fermentation with a blend of Lactobacillus and brewers yeast formulates a complex sour beer with notes of peaches, stone fruit, pineapple, and mango.
Method
Unless intended, sourness in beer is considered a fault. However, in the case of Berliner Weiss, Gose, and Kettle soured beers – bacteria is added intentionally to produce different forms of acidity that contribute to pleasant tart flavours and mouthfeel. These beers can be blended with various fruits, but in the case of the Sour IPA – loads of hops are added for bitterness, flavour, and aroma at different stages. This creates a juicy and citrusy beer with a refreshing tart finish.
