Siete Misterios was founded in 2010 with the intent of keeping traditional mezcal production at the forefront of the mezcal industry. They produce a wide range of mezcals that all highlight a single agave varietal. Siete Misterios is a direct response to the industrialization seen in the Tequila industry and the growing influence it has had on low-quality mass-produced mezcal. They are dedicated to art of the mezcalero and as such their bottles change batch to batch with agave grown in a slightly different micro-climates.
is Zapotec for agave Espadin, and they chose this name as this mezcal is different from the Siete Misterios Espadin. It is the first expression from Siete Misterios that is made in a copper still rather than the clay pot still seen in their other mezcals.
Doba-Yej has an extremely fruity nose of fresh grapefruit, roasted lemons, basil, and violets with subtle rubber and tar-like phenolics adding depth. The palate matches the nose with rose water, pineapple, asphalt, and fresh cut grass clippings that lead to a long spicy finish of chipotle peppers.
Made from 100% agave Espadin, this young mezcal is milled by a horse-drawn Tahona wheel, fermented in pine barrels, then double-distilled in copper alembic stills before being bottled at ~45% alcohol by volume depending on batch.
