Guided by revered Master Distiller, Billy Walker, their team is on a ‘Meikle Tòir’ (meaning ‘big pursuit’). The goal: To carefully craft and cask-perfect a peerless peated single malt at their Speyside home, The GlenAllachie Distillery. Being independent allows for complete freedom to make decisions for all the right reasons, and to firmly place the focus on quality over quantity. In 2018, they began producing peated spirit – a much rarer style for the Speyside region – for several weeks each year. They only produce around 100,000 litres of new-make annually to create their premium small-batch releases.
Tasting Notes
From the distillery: “The Chinquapin cask itself has the aroma of old leather and cigar smoke, which works wonderfully well with the sweetness derived from the Bourbon casks – the combination of both casks complements our beautifully sweet peat character.”
Method
Coming in at 35 PPM, the whisky has a sweeter style of smoke character owing to the mainland peat from St. Fergus used to kiln the barley. After a lengthy 160-hour fermentation, the whisky has a complex character which stands up well to ageing in virgin oak casks. American oak ex-Bourbon barrels, followed by Chinquapin virgin oak barrels.
