The winery San Silvestro is located in the village of Novello, within the heart of the Barolo district. Here, Paolo and Guido Sartirano run the business with wisdom and respect for the tradition and for the history of this company. They represent the fourth generation and want to be respectful towards the work their family did to be where they are today. Investments for the future with a keen eye on values they’ve learned from their ancestors: consistency, authenticity and innovation.
They work closely with grape growers from different wine-areas in Piemonte to offer a range of wines from classic Piemontese grapes and appellations.
Tasting Notes
Pronounced aromas of ripe red fruit, cherry jam and plum. Rich with velvety tannins and good persistance.
Method
Manual harvest of 50% of the grapes then dried for 40 days in baskets to concentrate aromas and colour. The other 50% is left on the vine for a natural appassimento (drying of the grapes) and harvested later. Separate vinification of the two versions of dried grapes. Maceration for 10 days with daily pumping over. Blending of the two wines after the malolactic fermentation. 6-month refining in small wooden barrels.
