From the folks behind arguably one of the city’s best beer bars, brewing and packaging at their new facility on Kempt Rd., Stillwell Brewing made its name fermenting and blending traditional oak-aged farmhouse ales but recently has focused its efforts on crafting staple styles for the home market, beers like Pils, Bitter and Kölsch. Tasting Notes
Cream Ale is a traditional, 4.8% abv hybrid style beer that brings all the refined malt character and mouthfeel of Stillwell’s lagers but with the soft fermentation and hopping of a classic American pale ale. The beer is very smooth in the glass with a thick, dense foam delivering bright and fresh but subtle American noble hop aromas to the nose. On the palate the beer is crisp and delicious while staying simple and easy.
Method
Cream Ale is made similarly to traditional Kölsch, using decoction mashing on Stillwell’s continental-style brewhouse and fermented slow and cool with an ale yeast. The beer is fermented under pressure, capturing the natural carbonation released in the cellar before being packaged carefully in cans and kegs. The brewery packages to order, so expect cans and kegs to always be fresh.
