After years in the restaurant industry, Dan Tanner started to shift his focus to wine, and while enrolled in sommelier classes, he began to take interest in beer. Fast forward – after a few years of slow growth from his garage, to farmers markets, to recently, a taproom in Chester, Dan has certainly taken the time to do things right. Tasting Notes
Cold IPA is a refreshing twist on the classic IPA style. Brewed with a unique process that involves cold fermentation and conditioning, this beer boasts a clean and crisp taste with a balanced hop bitterness. Its light body and refreshing character make it the perfect choice for any occasion. Enjoy the bold flavours and aromas of guava citrus and pineapple from this experimental hop variety, YQH-1320. And it’s made with local malt from Horton Ridge!
Method
These days, “IPA” can mean a lot of things. In the case of the Cold IPA, the idea is to produce a beer that features all of the vibrant hop aromatics and flavours that any IPA should be known for, but to make the mouthfeel and texture much more light and crisp – like a lager.
To achieve this, rice or corn can be used to lighten the body. But the real key is that the style is often fermented with lager yeasts (they make the finished beer more crisp and refreshing), then the beer sees a long cold conditioning (lagering) before release. Both lager fermentation, and the process of lagering are done at very cold temperatures – hence the name.
